These muffins are:
- ✅ Fluffy and moist
- ✅ Naturally sweetened with bananas
- ✅ Egg-free, dairy-free, and easy to make
- ✅ Great for meal prep, snacks, or breakfast
🍌 Ingredients:
- 2 ripe bananas (mashed)
- 1 ½ cups all-purpose flour
- ½ cup plant milk (almond, oat, or soy)
- ⅓ cup maple syrup or coconut sugar
- ¼ cup coconut oil (melted)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- A pinch of salt
👩🍳 Instructions:
- Preheat oven to 180°C (350°F) and line a muffin tray.
- In a bowl, mash the bananas. Add plant milk, oil, sweetener, and vanilla. Mix well.
- In another bowl, combine dry ingredients.
- Mix everything together gently. Do not overmix!
- Scoop into muffin cups and bake for 18–22 minutes.
