These muffins are:

  • ✅ Naturally sweetened with bananas
  • ✅ Egg-free, dairy-free, and easy to make
  • ✅ Great for meal prep, snacks, or breakfast

🍌 Ingredients:

  • 2 ripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • ½ cup plant milk (almond, oat, or soy)
  • ⅓ cup maple syrup or coconut sugar
  • ¼ cup coconut oil (melted)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • A pinch of salt

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F) and line a muffin tray.
  2. In a bowl, mash the bananas. Add plant milk, oil, sweetener, and vanilla. Mix well.
  3. In another bowl, combine dry ingredients.
  4. Mix everything together gently. Do not overmix!
  5. Scoop into muffin cups and bake for 18–22 minutes.
